Orange Blossom TraditionalThe Orange Blossom is a traditional oak-aged mead made with Florida orange blossom honey and sits at the lower end of the “sweet” spectrum. In this mead we imported a special yeast to bring out the desired characteristics often found in exclusive German white wines.

Clover TraditionalOur traditional clover is a show mead that focuses on the characteristics of the honey without the embellishment of the sweetness. Nurtured by time, this mead is aged for 6 months before reaching its potential and made available.

Tart Cherry Melomel

Tart Cherry Melomel Our cherry mead is about as cherry as it comes. Using a mixture of clover and basswood honey along with a blend of both tart red and sweet dark cherry juice, this mead was fermented dry and had additional tart cherry juice added along with buckwheat honey to bring us to our final product.

Spiced Cyser

Spiced Cyser Our spiced cyser is our most complex batch to date. A blend of five different apple sources, clover/orange blossom/basswood honey blend, and rich dark sugars from India build the core of this batch. It is followed by the addition of an in-house spice blend and dates to give a rich, almost brandy-like finish, to a cinnamon russet apple that tastes like apple picking season. Can be consumed chilled, room temperature, or heated.

Hobo Christmas

Hobo Christmas Hobo Christmas was an early experiment to make a seasonal spiced mead. Using both star thistle along with local wildflower honey and spiced with a variety of winter spices, this mead will conjure an image of Christmas from long, long ago.

Wintry Waissails

Wintry Waissails Wassail is a German mulled spiced wine and a staple in homes during the colder months. Our wassail is a take on this old world drink. Using local star thistle honey we ferment our wassail recipe dry and balance the spices with a bit of sweet. Can be consumed chilled, room temperature, or heated as it is traditionally drank back in the old country.

Oaked Blackberry Oaked Blackberry was our first success story. On the dryer side of meads, this one brings the full tart of local Shennandoah blackberries followed by the smooth characteristics found in an high profiled oak aged table wine.
